CASSIE'S STEAK: 'BEST in WEST'

Steaks served at Cassie's Supper Club have been proclaimed to be among the five best steaks in the West.

American Cowboy magazine, published in Boulder, Colo., announced its selection of the "Five Best Steaks in the West" in its February/March publication.

Cassie's porterhouse was ranked No. 2, behind the bone-in filet served at Mahogany Prime Steakhouse in Omaha, Neb.

"We scoured the Western states by polling friends, speaking with chambers of commerce, doing Web research, etc.," American Cowboy Editor-in-Chief Philip Armour said.

"Cassie's was mentioned several times by different sources in conversations about Wyoming, so it seemed unavoidable."

The magazine sent Cassie's a note stating,"Keep up the good work." A plaque, with the magazine's front page imprinted with the "best steak in the West" recognition, was also given to Cassie's.

Steve Singer, who along with his wife Melody own Cassie's, said the full aging process he uses to make the steaks so popular includes wet curing and dry aging so steaks are sealed and cured in their own juices.

"Our steaks are so good because an old friend of mine from New York, Ernie Carnavale who lived up the North Fork, gave me a recipe for au jus," Steve Singer said. "He made me promise I wouldn't give it to anybody else, and I've been using it ever since.

Singer said Cassie's has been serving the porterhouse since 1995. The steak was and still is, called "oil man" because it was a favorite of all the oil men around Cody, Singer added.

When asked which steak was the most popular with customers, Singer said all the steaks are popular.

"But the biggest steak I ever sold was a porterhouse," he said. "The customer wanted me to cut a big one, so I did. It was 72 ounces and the customer ate it in 15 minutes."

The Cody restaurant has received other recognitions including being featured on Jamie Oliver's "American Road Trip" TV show in June 2009, and in November 2009, the Travel Channel included Cassie's in the "Meet the Natives" program.

Cassie's also was featured on the Travel Channel's "Passport to Great Weekends" with Samantha Brown in July 2008. And in its November 1999 issue, Cowboys & Indians magazine voted Cassie's one of the top 20 steakhouses in the West.

Cassie's was founded and opened by Cassie Waters in 1922. Steve Singer and family purchased and renovated the establishment in 1995. The restaurant has a capacity of 400 customers with three levels of nonsmoking dining areas, a room for private parties, three bars and a large dance floor.

Steaks are hand-cut to order before grilling. Seafood, chicken and pasta are also on the menu.

Steve Singer is a graduate of the National School of Meat Cutters in Toledo, Ohio. He has been a meat cutter for 35 years and serves as chef with his son Nate and assistants Justin Armacost and Josh Beather.

SINGER PERFORMS ACROSS EUROPE

Combining his love of music with a desire to travel, Jakob Singer spent almost a year playing music in Europe.

Singer, 26, graduated from college in 2007 with a degree in classical guitar. He'd always wanted to go to Europe, so he decided to take the trip.

"I wanted to do something before I had to get a career," he said. "It was a great opportunity and fun trip."

He went to Holland in January 2009 and lived with his cousin in Haarlem, about 15 minutes from Amsterdam.

Singer booked gigs in the area every weekend. He spent much of his time walking the cobblestone streets with two moving dollies that carried his equipment. He played some classical music but mostly stuck to classic rock songs like "American Pie."

It was great having 40 drunk people in Holland singing all the songs," he said. "I've never had that response to music before. You just don't get that much here."

On week days, he took The Eurorail and traveled to several other countries including Italy, France and Spain.

"My girlfriend bought a ticket, and I took her to London and Paris." he said. "We went to a little wine vineyard in France. There was a big wine festival, and we got to see Neil Young play."

Italy and Spain were two of his favorite destinations.

"Florence was the prettiest place I went," he said. "I liked Spain, too. My original idea was to go to Spain and learn Flamenco guitar but it was too expensive to get a student visa to Barcelona and Madrid."

Living in Europe took awhile to get used to.

"It's so much more expensive over there," he said. "The food is so much different, and it took awhile to adapt to that."

He also had trouble with the language barrier. While most people in Holland spoke at least limited English, he found Spain and Italy much harder to navigate.

After three months in Haarlem, money was low so he went to Scotland to stay with a friend he'd met in New York.

"He was managing a bar and offered me a job bartending." Singer said. "I stayed with him in his apartment above the bar."

"I made lots of good friends and had a great time," he said.

Singer remained through September before returning to Cody. His dad Daren Singer had purchased Edelweiss while he was gone so he's been helping with the remodel.

He's also back playing with old friend John Erwin in Big Juan and the Weed Wackers. Jake Scott and Justin Armacost make up the rest of the band.

"John Erwin and I have played together a long time," he said. "It's Willie Nelson-like country, both acoustic and electric."

The group will be playing at Cassie's and the Silver Dollar every week during the summer. They also have gigs scheduled around Wyoming and at Edelweiss near Clark.

Singer will release his second CD by the end of May. "Down on Rose Street" features songs written during his Europe trip. The disc will be for sale at their shows.

He plans to move to California in September to try to get a job at a recording studio.

Cassie's Supper Club changes a little each year, but some things remain the same; elegant dining, fun with a western flair. Among the most dramatic changes this year is a renovation of the back bar. The bar was built in the mid-1800s complete with its original marble, stained glass and large mirror. It came from the Silvertip Bar in Belfry.

Cassie's also has private dining in the new Orchid Room named for Cassies' only daughter located on the north side of the club for meetings, luncheons, and other gatherings. It is decorated with antiques including an old still and old bottles that were unearthed when a telephone line was dug on the site.

Around the dance floor is an actual art gallery with paintings done by Austin Kuck. He spent an entire winter reproducing works by some of the greatest western artists. The paintings were created on wood panels that already lined the dance floor complete with painted-on gilded frames.

The band stage houses Cassie's original cabin built around the turn of the century where West The Band plays year round. Steve Singer, the owner, is also the bass player in West. West is the premier band of Wyoming and has toured all over the country. They play some great originals like "Back To Wyoming."

Cassie's offers three levels of dining; starting off the dance floor and extending back into a more enclosed area. Steve Singer was a meat cutter for eight years and can identify good quality meats - meaning Cassie's serves only the best choice beef. His prime rib and steaks are cut to order and cooked to perfection. "We have some of the best prime rib in the state" adds Steve. Cassie's was voted "One of the Top Twenty Best Steakhouses in the West" by Cowboys & Indians magazine (Nov. 1999 issue). "That is a great honor" Steve adds. Diners may also select chicken and seafood including lobster and pasta dishes.

Cassie's has also become a popular place for lunch. The daily special is available for $4.50 and changes every day. You can have a big prime rib sandwich with steak fries and garlic toast for lunch or order one of the many lunch dishes available.

Steve and Melody work to keep the aura of Cassie Waters alive by bringing in as much memorabilia as they can find. They have acquired many of the original items from Cassies' estate. Also found, a collection of keys from the madam's many rooms, antique ranges, and a horse and buggy lap robe that belonged to Cassie. Claude Brown purchased the robe in 1954 at Cassie's estate sale. It was rolled up, tied with a piece of baling twine and stored in the Buffalo Bill Fur Salon vault until Katie Brown said, "It's back where it belongs." The robe now hangs in a case just inside the dining entrance.

Cody Wyoming is the "The Gateway to Yellowstone".
